PROCESSES

Washed

For this process, the coffee cherry is required to go through the wet mill. With this process, the coffee bean is separated from its shell and later is fermented in tanks of water, until the mucilage completely gets off.

Honey

In this process the coffee is only pulped in water. The mucilage remains and the coffee bean is dried in the sun on stretchers or African beds. This process is a combination between the washed and natural process.

Natural

The process in which the coffee cherry is completely dried without previously removing any of its layers. The coffee cherries are placed on stretchers or African beds in the sun.

FINCA LA CABAÑA

Isauro Solares

Our coffee comes from Finca La Cabaña, owned by Isauro Solares.  The farm is located in Nueva Santa Rosa, Guatemala. With a height of 5,250 feet above sea level, dedicated to the production of Arabica, Strictly Hard Coffee (SHB).

Isauro has work so hard as a producer, he is a great community leader and has been innovating in the production of different variaties and in the processes.  He has won several awards and recognitions, although being a small producer.

He currently implements environmentally friendly practices.  He does not apply herbicides, and uses organic fertilizers.  He also implements soil conservation practices and has already diversified crops, planting in addition to coffee; avocado, banana, macadamia and produces natural honey, which contributes to the maintenance of ecosystem services and the biodiversity of the area.  

This  has a positive impact in the quality of coffee.  One of his goals is the restoration of the forest landscape, as well as to keep helping the producers of the community he leads.

Thanks to Café Naranja´s project, he has received various trainings including an important one: a Q Processing Level 2 certificate from the Coffee Quality Institute.

He participated in the South East Regional Competitions, and has obtained the following places:

2018 – 3rd Place Honey and Washed
2017 – 1st and 2nd Place Honey,                                          2nd Place Washed

La Cabaña´s 2017 and 2018 harvest was selected as one of the Guatemalan Coffees that sells in airports around the world.
